Evergreen Brown Bread Recipe
Our brown bread is popular with guests and we are so often asked for the recipe that we have set it out below for you to try at home. Happy baking!
225 g or 8oz of whole meal flour
225 g or 8oz of self-raising flour
1 rounded teaspoon of baking powder
1 level teaspoon of bread soda
1 carton (125ml) of yogurt with hazelnuts
1 large egg
fresh milk – about 225ml (or 8 fl oz)
About 50-60 minutes (190C, 375 F, Gas 5) reduce temperature to 180 after the
first 15 minutes.
Pre-heat your oven. Put the first 4 dry ingredients into a large bowl and mix together. Put the
yogurt, egg and the milk in another bowl and whisk together. When mixed add to the dry ingredients to make a soft dough. Add more milk if the mixture looks a bit dry. Grease a loaf tin and place the mixture in. We find cutting a line about 1 cm deep with a knife along the middle gives your loaf a nice shape and crunchy top. Place into your oven to bake.
When cooked, carefully remove from oven and place on a cooling tray. It’s great still warm and fresh from the oven or cool. Best served within 2 days of baking – it never lasts longer in our home!
